Roosevelt Beans
This recipe is from 'Roosevelt Lodge' at Yellowstone National Park, Wyoming
1 lb hamburger
1/2 lb bacon, chopped into 1/2-inch dice
1 onion, chopped into 1/2-inch dice
1 (16-oz) can pork & beans
1 (12-oz) can kidney beans
1 (12-oz) can lima beans
1 (12-oz) can butter beans
1/2 cup brown sugar
2 Tbsp cider vinegar
* 1 Tbsp prepared mustard Cheap yellow mustard
1/2 cup ketchup
* 1 Tbsp honey
salt & pepper to taste. Light on the salt and pepper.
* I substitute Mrs. Dash.
* They always seem better if you cook them the night before, refigerate and then heat them up again.
Fry meats; sauté onions with meats. Do not drain. Stir in next 8 ingredients. For thicker beans, drain the liquid from the canned beans. Place in a large, oven safe bowl.
* I do not drain the beans or meat.
Bake in 325 oven for 45 minutes. 8 to 10 servings
